Fermentation and aging: 4-day maceration with 2 pump-overs a day. Alcoholic fermentation in stainless steel tanks and fourth-use French oak barrels; spontaneous malolactic fermentation. Aged 6 months in oak barrels.
Limited production.
Eye: Carmine red.
Nose: Seductive with the presence of red, fresh and sweet fruit. Notes of balsamic aromas (licorice) and Mediterranean herbs (lavender).
Mouth: Fresh, fruity, almost explosive entry with a light finish without marked tannicity.
Perfect match for informal dinners and outdoor lunches, tartars or roastbeef as well as chocolate desserts.
