Fermentation: spontaneous on indigenous yeasts, during 25 days of maceration with 2 bâtonnages (Stirring) per day. Fermentation of the different juices is done separately. Malolactic fermentation is spontaneous
Aging: short stay in French oak barrels for Grenache and Carignan and American oak barrels for Syrah.

Tasting note
Eye: Red pepper with a note of ripe violet and a well-formed tear.
Nose: It reveals its personality and typicality of the Montsant region and a surprising complexity to be a wine that has been as little married with wood. The ripe red fruits prevail in front of balsamic notes (mint). It is a wine that generates a feeling of Mediterranean freshness.
Mouth: First fruity sensation, fresh and sweet with warmer notes on the end. A long, structured wine with a clean, round tannin. It is characterized by the combination of the purity of the red fruit conferred by Grenache, the balsamic freshness that Carignan brings and the well-adjusted acidity of Syrah.
Food and wine…
It is very pleasant to enjoy while sharing a drink on the run, with a “mountain arrosso” (rice dish with meat), a red meat or a stew.
