Fermentation and aging: Short maceration in the press for colour. Spontaneous fermentation with native yeasts, finished in the bottle under crown cap. No added sulphites and undisgorged: the wine keeps its fine lees.

Celler Testuan’s L’an[Ç]tral Rosat 2025 is a sparkling rosé of Syrah made by the ancestral method, with a single fermentation that starts in the cellar and finishes in the bottle. A lively, dry and saline wine, born of Alella’s granitic sand.
Appearance: Bright red-pink with cherry highlights. Fine, joyful bubbles.
Nose: Red fruit (raspberry, pomegranate) and violet over a saline, balsamic background.
Palate: Direct, vertical and electric. Dry, with body and a clean, saline finish.
Seafood cooking: prawns, tuna tartare, «a la llauna» rice, cuttlefish with peas, fideuà and goat’s cheeses. Serve at 6–8 ºC.
